Tip-Top Turnip Salad

1 Cup Shredded Turnip
1/4 Cup Chopped Parsley
1/2 Cup Chopped Celery
2 Scallions, finely chopped
1 Red Pepper, finely chopped
Juice of 1/2 Lemon
1 Tblsp Dulce Flakes
1 Tsp Maple Syrup (or other sweetner such as Stevia)

Combine the turnip, parsley, celery, scallions and red pepper. Toss together. Add lemon juice, dulce flakes and maple syrup. Toss again. Taste and add more sweetner if desired.

Keeps well in the refrigerator. Can be served over sprouts or baby greens, if desired.

Daikon radish can be substituted for turnips.

Turnips contain Calcium and Potassium. The juice of turnip greens contain more calcium than an equal amount of milk, so run the greens through your juicer.
