Rhubarb Cake

Ingredients

Cake Batter

1/2 c butter

1 1/2 c sugar

1 c buttermilk

1 tsp vanilla

1/4 tsp salt

2 c flour (unsifted)

1 tsp baking soda

2 c diced rhubarb (uncooked)

Topping

1/4 c sugar

1 tsp cinnamon

 

Directions

Preheat oven to 350F. Grease a 9''x13'' pan. In a large mixing bowl cream butter and sugar, add an egg, buttermilk and vanilla, mix well. In a medium bowl combine flour, salt and baking soda, add to the liquid mixture, fold in rhubarb. Pour in the pan. Sprinkle the batter with the mixture of 1/4 c sugar and cinnamon. bake for 35-40 min, or until an inserted wooden tooyhpick comes out dry.
